Observed may, spicy mayo, and tartar sauce between 47-53*F and on ice in the small cold holding unit to the right of the hot line. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, the unit is broken which is why they are using ice. The sauces had been there since 10am. PIC voluntarily discarded. Discussed filling containers halfway and using a larger pan to create an ice bath. Corrective Action: Corrected at time of inspection.
