Inspector's notes

Observed a variety of Time/Temperature Control for Safety (TCS) food items located in the walk-in refrigerator registering internal temperatures between 46°F-50°F. Food items include cooked chicken wings, various deli meats, and cooked pastas. Upon further investigation, the walk-in unit was observed holding an ambient air temperature of 46°F. The establishment's temperature monitoring log indicated the walk-in was holding at 39°F at 4pm the day prior to the day of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The manager contacted repair services at the time of inspection and confirmed a technician would be out the same day for repairs. The manager placed all TCS food on ice or moved to additional refrigeration/freezer units. In addition, observed cooked pastas (spaghetti & penne) located in a reach-in refrigeration unit registering internal temperatures between 47°-50°F. Per manager, the cooked pastas had been placed in the unit the night prior to inspection. The manager voluntarily discarded the pastas at the time of inspection.
