Observed an employee actively washing dishes in the mechanical warewasher with a chlorine sanitizer concentration at 0 ppm. Upon request warewashing was conducted at the 3-compartment sink once the appropriate chemical concentration of chlorine 50 to 100ppm was established. The dishes and utensils were re-washed, rinsed, and sanitized, and warewashing will occur in the 3-compartment sink until the mechanical warewasher is serviced. Please ensure to properly wash, rinse and sanitize utensils and food contact surfaces at the appropriate chemical concentration. Corrective Action: Corrected at time of inspection.

The serving line (salad bar, main entrees, condiments, and ice for drinks) were on a salad bar without any protection from contamination. Consumers serve themselves. No sneeze guards on salad buffet. No lids for condiments. Ice is self serve in a cooler. Butter that has been melted was sitting at room temperature with spices for dinner service. Had employee put butter back into refrigerator to hold cold until dinner service. Provided Person in Charge (PIC) with both 4 and 6 hour time as a control handout to develop a policy. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
