Observed cooked pasta (46-51*F) and cut spinach (56*F) intended for cold holding in bin with little ice along prep line to be added to soup once reheated. Ice was added to bin to rapidly cool TCS foods to 41°F at time of inspection. Verified pasta and spinach cooled to 42*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed two door under the counter fridge next to oven have an ambient temperature of 51.8 - 54*F. All TCS foods inside unit were prepped in the last two hours. PIC moved all food from unit into walk-in freezer to rapidly cool and will not store food in unit until holds 41*F or lower. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
