PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed a metal container of beef broth, a metal container of shredded beef and a bag of shredded beef inside of the small prep top unit directly adjacent to the countertop. The internal temperatures as measured using a probe thermometer of the shredded beef and the beef broth ranged from 51°F to 53°F. Other foods in the unit such as a head of lettuce was measured using a probe thermometer and had an internal temperature of 40°F. Per the person in charge, it was not clear exactly if the shredded beef and beef broth had been left out or how it was handled. Based on the closing time of 10:00 PM the night before and the current time of inspection, the food was embargoed. Discussed with person in charge keeping track of food and tracking food times and temperatures when working with the food when it is removed from cold holding at 41°F.
