Inspector's notes

Observed an employee taking a drink from a beverage with a gloved hand, placing the drink down, and then going into the walk-in cooler to grab some food to start food prep. Discussed with the person in charge that anytime we change tasks or contamination to the hands occurs, such as when taking a drink from a beverage, the employee must remove their gloves and wash their hands and grab clean gloves prior to resuming food prep. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Observed several dishes stored as clean at the clean dishes rack that upon separation, had water still trapped between the nested dishes. The person in charge separated the wet dishes so they could finish air-drying. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Did not observe sanitizer testing strips for quat sanitizer at the 3-compartment sink. Inspector utilized personal testing strips to verify the concentration of quat sanitizer was within the appropriate range of 150-400 parts per million. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. A re-inspection will occur within 10 days or no later than July 9th, 2026. Corrective Action: Correct prior to re-inspection.
