Observed cooked meat and roasted green chilies in hot holding unit with internal temperatures between 119°F and 128°F. Per staff items were placed in unit 2-3 hours prior. Manager instructed staff to reheat items to 165°F and increased temperature of hot holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed roasted salsa in a large, deep pan in the walk-in cooler with internal temperatures between 48°F-54°F at the time of inspection. Per person in charge (PIC), the salsa was prepared the day before and cooled overnight without supervision. Discussed cooling methods and provided guidance documents for cooling. Salsa was discarded at time of inspection (see embargo form). Ensure food is cooled from 135°F to 41°F or less in 6 hours provided that the food is cooled from 135°F to 70°F within the first 2 hours and proper cooling methods are followed.
