Observed house made French onion dip dated 6/12 in the reach in refrigerator across from the grill. In the walk in refrigerator observed cooked sausage patties dated 4/28. After discussion with the person in charge it was determined the French onion dip was been stored under refrigeration for over 7 days. After discussion with the person in charge it was determined the cooked sausages were portioned and frozen on 4/28, and thawed yesterday. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The French onion dip was discarded at time of inspection. The thaw date was added to the sausages at time of inspection. If ready to eat TCS foods are frozen, they should be labeled to include the date the food was prepared. The date the food was frozen, and the date the food was removed from the freezer to thaw in the refrigerator. The total time in the refrigerator cannot be more than 7 days. Corrective Action: Corrected at time of inspection.

Outdoor food service requires approval from MCESD. Instructed PIC to submit minor remodel application for outdoor food service. Predefined Comment: Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. After discussion with the person in charge it was determined the chicken wings had been cooling since 12PM. Predefined Comment: All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed low temperature chlorine bar dish machine not actively being used with a final sanitizer concentration of 0 PPM. After running the dish machine multiple time sanitizer concentration never measured above 0 PPM. Acceptable chlorine concentration shall measure between 50-110 PPM.

Observed a chef grab a raw hamburger patty with a gloved hand and place the patty on the grill. The chef removed their gloves and put on a new pair of gloves without washing their hands. Then the chef placed a pre-cooked hotdog on the grill with their gloved hand. Food handlers shall wash their hands between working with raw food and RTE food. After discussion with the chef it was determined that all TCS foods were within safe time parameters and were moved to the walk in cooler at time of inspection.
