Observed stacks of plastic pans stored as clean on the wire rack across from the dish area. When separated, clean water was observed in between the pans and pooled on the underside of rim. Discussed placing equipment and utensils in a self-draining, tilted and inverted, position that allows adequate air drying. Items must be allowed to drain and to air-dry before being stacked or stored. Corrective Action: Corrected at time of inspection.

Observed accumulation of flour on wall and outlet near walk in fridge entrance. As well as dirt accumulation on floor behind shelving units. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Discussed cleaning shelving units with PIC. Must clean physical facility prior to next routine inspection. Repeat violation: 7th. Corrective Action: Correct prior to next routine inspection.
