Establishment currently adds grill marks to raw chicken, cool the product, and cook the chicken the following day. Emailed PIC department guidance for non-continuous cooking process, non-continuous cooking logs, and a fillable non-continuous cooking policy template. Non-continuous cooking of raw animal proteins requires prior approval of written procedures by department. Discussed with PIC cleaning procedures for new ColdSnap frozen treat machine. Machine allows customers to place a packaged shelf stable milk product into machine. Machine will cool and dispense product for immediate service and customers must remove the open can. Discussed with PIC wash, rinse, and sanitizing machine in place every 4 hours if in-use to remove any potential debris from open cans being removed and dispensed.

No detectable sanitizer in in-use automatic dishwasher set for chemical sanitizing. Manager adjusted the dispenser and changed out the chemical bottle so the dishwasher was able to dispense at the proper 50-100 ppm chlorine and had all the recently washed equipment returned for re-washing and sanitizing.
