Observed a carton of raw in shell eggs above RTE foods like sauces, meats, and cheese inside the walk in refrigerator located back of house. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed several TCS (Time/Temperature Control for Safety) food items on the salad bar (e.g., Sliced lettuce, sliced tomatoes, sliced purple onion, and sour cream sauce.) being held using Time as a Public Health Control without proper time markings. Per the PIC, the items were placed out at 11:00 AM and are discarded 3 hours after. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed dishes being sanitized in the three-compartment sink, with the quat sanitizer measuring below 150 PPM. Alerted the manager who added more quat tablets to the solution. After dissolving the tablets and stirring the quat solution measured (200 PPM). Discussed the importance of checking hand-dosed sanitizers each time they are made to make sure they reach the appropriate concentration. Corrective Action: Corrected at time of inspection.

Staff stated they pulled these foods from the walk-in 1 hour prior to temperature measurement, and they intend to keep them on a 4-hour time control. They did not have a time control policy or a method of documenting discard times. Alerted the manager and worked on a time control policy. Discard times were documented on stickers affixed to the containers. Corrective Action: Corrected at time of inspection.
