Inspector's notes
Observed sanitizer at the 3 compartment sink with a concentration of 0ppm for sink and surface. Per PIC, she and the other food employee just came in at noon; and the sanitizer has been in the sink since this morning and was not changed. PIC drain sink and re-made the sanitizer solution. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces sanitized using sink and surface (lactic acid) must be sanitized with a concentration according to manufacturers specifications. Corrective Action: Corrected at time of inspection.
