Observed the following cooked TCS foods being stored in the 2-door standing refrigerator while heavily saran wrapped: hatch green salsa(53'F), veggie kabobs(52-55'F), chicken kabobs (52-55'F). Per PIC these items were prepared earlier this morning about 1.5 hours prior to inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Person-in-charge (PIC) had employee move raw in-shell eggs to bottom shelf of unit at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking parameters in § 3-401.11 of the Food Code at all times to prevent cross contamination. Observed a Y-valve connected to the faucet at the mop sink with an Atmospheric Vacuum Breaker (AVB). Observed open-ended hose and chemical dispenser attached to each outlet on the Y-valve. PIC disconnected Y-valve from mop sink faucet at time of inspection. Y-valves and similar downstream shut-off devices that have an integral shut-off valve connected to a faucet equipped with an integral AVB, including chemical dispensers, are not permitted on a faucet equipped with an AVB, due to the device’s inability to be under constant pressure as this will result in failure of the backflow device. Corrective Action: Corrected at time of inspection.
