#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed leafy greens (spinach, mixed salad greens), cut tomatoes, cream sauce, tomato vodka sauce, butter, mozzarella cheese, and various other TCS food items, with an internal temperature range of 48F-53F stored in the two prep tables across from the stone top stove. Per PIC, the food items have been in the prep table for less than 2 hours. PIC had employee move the items to the blast chiller for rapid cooling to 41F. Recommended using time as a control for some of the prep tables. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Per cooling log, porchetta was cooked at about 730 this morning and had finished cooling at about 11. TCS foods were discarded at the time of inspection.
