Observed commercial-sized pesticide bottle stored underneath cash register area in coffee bar at the time of inspection. Only those poisonous or toxic materials that are required for the operation and maintenance of a food establishment, shall be allowed in a food establishment. Discussed proper pest control measures with the PIC. All pest control for the establishment must be performed by a certified pest control specialist. PIC discarded the bottle of pesticide at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed hard boiled eggs actively cooling in a metal container filled with ice water. Opened carton of raw egg whites observed cold held in the ice water with the RTE hard boiled eggs. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed half and half to have a temperature of 60*F in craft on barista area counter. Person in charge (PIC) stated half and half is prepped at 7am and discarded at 4pm, not stored in the refrigerator. Recommended to PIC to implement time as a control if establishment wants half and half at room temp or to store it in the fridge when not in use. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Ambient temperatures of the unit was recording 50*F. The salads were placed in the unit less than 3 hours prior to inspection and were moved to a working cooler to cool down. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
