PIC stated food item has been in unit for longer than 4 hours. Suggested having one "Everything Bagel Twist" in clear case for display purposes and to store for service items in coldholding units to be reheated for service when ordered.

Observed kegged cold brew in 2-door cold holding unit in basement with unit measuring at an ambient temperature of 47.1*F on left and 51.4*F on right side. **Person in charge (PIC) stated these items have been in unit for over 4 hours. Discussed with PIC that time/ temperature control for safety (TCS) items must be cold held at 41*F and below at all times. PIC will voluntarily discard food items.
