Inspector's notes

Observed the mechanical dishwasher with 0 ppm chlorine after three different dishwashing cycles. The chlorine concentration should be 50 ppm as per dishwasher instructions. Had employee prime the dishwasher and run a full cycle, after which the solution in the dishwasher was reading 50-100 ppm. All dishes that had been in the dishwasher prior to priming were placed back in the dishwasher to be resanitized. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a 6-quart container of marinated, raw chicken in the reach-in cooler in the back of the kitchen reading 45-50°F. Per employee, the chicken had been kept there for 2 days. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
