Observed prep fridge in coffee bar have an ambient temperature of 53°F holding TCS foods above 41°F. TCS foods include hard boiled eggs (48°F), precooked eggs (52°F), sliced American cheese (50°F), halved tomatoes (53°F), egg bites (54°F), and salsa (53°F). Person in charge (PIC) had temperature log showing the unit measured 40°F this morning at 8am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed foods cooling properly with temperatures ranging 41-46°F. Corrective Action: Corrected at time of inspection.
