Establishment uses heat-resistant cotton gloves for handling cooking equipment associated with hash brown patties. Recommended treating cotton gloves like slash-resistant gloves and developing a policy of putting on a single-use disposable glove, the cotton glove, and a single-use disposable glove on top. Cotton gloves are not smooth and easy to clean and should not be used as a consistent food contact surface.

Observed employees to be washing hands for less than 10 seconds. Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with new single-use paper towel, and turn off handles with paper towel to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of bacteria and contamination. Employees washed hands for full 20 seconds at time of inspection. Observed employee crack raw, unpasteurized eggs into skillet with tightly gloved hands and then continue cooking and handle clean plate on cookline without washing hands. Observed employee handle customer credit card and then scoop ice for customer drink without washing hands. Hands must be washed prior to donning new gloves when switching tasks where contamination could occur, after handling trash, coming into kitchen from using restroom, handling customer payment, touching self/face/hair, and whenever contamination could occur to prevent spread of pathogens. Repeat Violation PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed low-temp dishwasher at bar utilizing chlorine sanitizer in use at time of inspection to have a chlorine concentration of 0ppm. PIC observed that sanitizer bottle did have sanitizer and primed machine. Machine was run again and observed at 0ppm. Machine is not pulling chemical correctly. PIC called for service and alerted staff that machine is not to be used. PIC agrees to use dishwasher in kitchen until unit is serviced.
