Under prep counter observed a container of spinach and a container of kale- both with ripped, non-intact leaves- holding between 49-53*F. Per PIC both had been out less three hours. Establishment tracks 4 hour time intervals for these items, but the policy is to place items back into refrigeration at 4 hours. Discussed 4 hour time as a control and cold holding to ensure TCS items maintain 41*F or below. Provided 4 hour time as a control guidance. PIC placed items in refrigerator where they began to cool to 41*F. Corrective Action: Corrected at time of inspection.

Provided information about animals in food establishments via e-mail. The establishment was observed adding whey protein to smoothies and selling a commercially-manufactured granola mixture containing hemp seeds. Any substance(s) added to food must be GRAS (Generally Recognized as Safe) and/or used consistent with all legal requirements. The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection.
