Informed PIC that this equipment needs to be repair so that is it properly functioning or a rubber drain cover may be obtained. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Informed PIC that all tableware available for consumer self-service needs to be displayed with the handle upwards to prevent contamination of the food contact surfaces. PIC discussed this with employee. Employee properly stored the tableware at time of inspection. Knives, forks, and spoons that are not prewrapped shall be presented so that only the handles are touched by employees and by consumers if consumer self-service is provided. Corrective Action: Corrected at time of inspection.

Observed orange and yellow discoloration and buildup on the walls and ceiling above the corner oven. Observed black discoloration and matter on the wall underneath the ware washing area. Informed PIC that these areas need to be cleaned and continue to be cleaned at a rate which precludes the accumulation of organic matter, dirt, and debris. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. 6-201.11 - Core: Floors, Walls and Ceilings-Cleanability Addl Notes: Observed multiple holes in the wall underneath the ware washing station.
