Observed sushi fish cooler on top of the counter without a thermometer. Cold holding equipment used for time/temperature control for safety food (TCS) shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device (thermometer) that is located to allow easy viewing of the device's temperature display. PIC provided thermometer at time of inspection and affixed it inside the cooler. Corrective Action: Corrected at time of inspection.
