Observed covered containers of shredded cheese in the reach in fridge located in the back area of the facility at a temperature of 50 F. Employee stated that they were prepped an hour ago. All TCS foods cooling were uncovered to allow for rapid cooling. PIC was informed that in order for TCS items to cool properly they must be placed in fridge uncovered. Corrective Action: Corrected at time of inspection.

Discussed with PIC if the egg or burgers are cooked under temperature or "cooked to order". PIC said burgers are always cooked well done and eggs can be ordered under cooked. Observing the menu there is not a consumer advisory notifying a consumer that they are going to eat something that is raw or undercooked or includes ingredients that are raw or undercooked and the associated health risks. Discussed with PIC to either cook the fried egg all the way or add a consumer advisory to the menu that includes a disclosure and a reminder. PIC stated they will no longer serve eggs under cooked.
