Observed a closed container of raw shrimp above an open container of RTE sauces. No direct contamination was observed. Alerted the Person in Charge (PIC) who moved and rearranged the walk-in at the time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross-contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed a large bin of cooked and cooled fried popcorn chicken (63-65) sitting out at room temperature by the fryer. Staff stated they retrieved it from the walk-in 2 hours prior and they re-fry the popcorn chicken as orders come in. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Staff moved it back to the walk in at time of inspection. Discussed the importance of maintaining cold holding temperatures. Corrective Action: Corrected at time of inspection

Alerted the Person in Charge (PIC) who moved and rearranged the walk-in at the time of inspection. Inspector's notes

Observed cooked pork (50°F), cooked water chestnut (47°F), and pooled eggs (54°) cold holding above 41°F Inside the main prep table on the cook line. All Time Temperature Control for Safety (TCS) foods were placed in the prep table around 2 hours before temperature measurement. Upon further inspection, it was determined the prep table was running warm at 47.4°F on the min/max. All TCS foods improperly cold held were relocated to the walk-in unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
