Observed an employee at the three compartment sink spraying off food debris from dirty dishes and then putting them on the clean side to dry. When asked what the next steps were they said the dishes left to dry on the clean side would be put away as clean. Re-educated staff on wash, rinse, sanitize requirements for dirty dishes and altered the manager. Another staff member took over the dish area as the previous staff member ended shift. The three compartment sink was cleaned and set up and the dishes were washes, rinsed, and sanitized. Correct By: Corrected At Time Of Inspection
