Inspector's notes

Observed a gloved employee in the front of the establishment touch the bathroom handle to retrieve the sweep. They then began sweeping and cleaning the salsa bar before returning to the main kitchen, where they grabbed bags of chips. This employee was stopped and told to doff their gloves, wash their hands, before donning new, fresh gloves. Also observed a gloved employee in the back of the kitchen sweeping, then immediately switched to grabbing a handle to scoop out salt. This employee was also stopped and instructed to doff their soiled gloves, wash their hands, and grab a fresh pair of gloves. Re-educated staff on when to wash their hands. Discussed best practices around glove usage and cleaning. Corrective Action: Corrected at time of inspection.

Also observed open cookies wrapped in a napkin and an open beverage directly below the prep table in the back of the kitchen. Alerted manager who discarded these personal foods at time of inspection. Discussed employee beverage storage and employee eating. Discussed food and drink requirements with staff. Eating must always occur in a designated location away from food and food contact surfaces. SECOND REPEAT. Observed multiple salsas made within the last 4 hours with lids on (49-52°F) measuring above 41°F in covered single-use containers (in the expo fridge, in an ice bath by the register, and in the walk-in). Alerted staff who removed the lids at the time of inspection. Staff retrained on cooling methods. refrigerators cool through airflow. Lids to stay off of cooling foods until fully cooled to 41°F. Allow salsa to fully cool to 41 before packing the single-use containers. Discussed keeping temperature logs to identify when items finish the cooling process. Corrective Action: Corrected at time of inspection.
