The pasta cooked yesterday is cooling in covered containers stacked on top of each other's. Internal temperature is at 49-50 degrees F. For cooling rapidly use ice bath then store food in shallow containers with no lids and spread the containers. Cooked food has 2 hours to cool down from 135 degrees F to 70 degrees F and 4 hours from 70 degrees to 41 degrees F. Food was discarded.
