Equipment for non-TCS (time and temperature controlled for safety) foods shall be cleaned at a frequency necessary to preclude accumulation of residue. Discussed with PIC cleaning frequency of non-TCS food equipment. Ensure ice machine is cleaned as frequently as necessary to prevent to accumulation of residue.
