Observed cooked sloppy joe date marked 2/4 and cooked pork date marked 1/17 in the drawer cooler below the grill. Observed cooked French onion soup date marked 2/6 in the lower portion of the prep cooler. After discussion with the chefs, it was determined the foods had been frozen since the prep date and had been stored in refrigeration for less than 7 days. If ready to eat TCS foods are frozen, they should be labeled to include the date the food was prepared, the date the food was put in the freezer, and the date the food was removed from the freezer to thaw in the refrigerator. The total time in the refrigerator cannot be more than 7 days. The day of preparation shall be counted as Day 1.
