Observed tapioca pearls holding 82F. PIC said they are held for no more than 4 hours but did not have the in/out time written and did not have a time as control policy. Also observed milk and half & half in the walk-in refrigerator holding 44-46F. PIC called for maintenance, as the unit is holding 55F ambient air temperature, captured using inspector's min/max thermometer. Corrective Action: Corrected at time of inspection.
