#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

The cold holding unit near the kitchen entrance was not holding proper temperatures. Hard boiled eggs were 44*F and pasta was 46*F using probe thermometer. Min/max thermometer was left in the unit and 48.2*F was observed. Person in charge (PIC) stated they were made the previous day and voluntarily discarded. See embargo form. The other foods in the unit were made same day within 2-hours according to PIC. Those foods were moved to alternate unit to rapidly cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held from previous day were discarded by PIC at time of inspection. All TCS foods improperly cold held and made within the last 2-hours were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
