Inspector's notes

Observed containers of sliced ham at 48*F, turkey at 46*F, and tomatoes at 47*F in prep table. Containers were overfilled and the out of temperature food was laying on top. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, food had been placed in prep table one hour prior. Instructed PIC to move the out-of-temperature foods to reach-in refrigerator and suggested keeping the containers at half the capacity to ensure proper cold holding. Corrective Action: Corrected at time of inspection.
