Observed front drive through cookline employee crack raw eggs with gloved hands (no drop gloves) and proceed to make a customer drink, use reach-in fridge and handle clean grilling equipment food contact surfaces with same contaminated gloves. Discussed removing gloves and washing hands after handling raw animal proteins. Establishment uses drop gloves, but drop gloves were not used. Corrective Action: Corrected at time of inspection.

Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Also observed, front drive through counter reach-in fridge holding lobster, crab, raw shrimp, oatmilk, and milk 48-60*f degrees. Per manager all items were out of temperature less than 4 hours.
