Inspector's notes

Obtained temperature of 49*F for cut melon in the walk-in refrigerator. PIC indicated that the melon had been cut and stored in the walk-in the day before inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at the time of inspection.

Inspector's notes

Temperature inside the walk-in measured at 46*F, large volumes of cut melon is typically stored in this walk-in . Built in thermometer for the walk-in read 48*F . The store's A/C unit was out of order at the time on inspection, this may be impacting the walk-in 's ability to perform. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. The store has another smaller refrigerator that is maintaining a temperature of 38*F Discussed storing cut melon in the smaller working refrigerator , the PIC agreed to cutting smaller amounts of melon so it can be stored in this unit while the walk-in is down. Repair man arrived during the course of inspection, walk-in reached 40*F by end of inspection. Corrective Action: Corrected at time of inspection.

Discussed with Person in charge the basin equipment shall have a smooth and cleanable surface. Per PIC that information will be shared with their boss.
