Observed cheese at 48F inside the under grill fridge. Ambient was at 49F. Manager was able to move all the food back to the walkin, as food had been there for 1.5 hours. Ensure that all TCS foods during cold holding are kept at 41F or less. Corrective Action: Corrected at time of inspection.

Observed no timestamp for time as a control cheese in an ice bath, at 62F during service. Talked to staff about policy, and wrote on a checklist the time the new product was put out. Observed cooling beans in the walkin in deep pans. 1.5 hours since it reached 135F, and the product was 80F on the outside, and 130F in the center. Manager added to their blast chiller, at 2 hours cooling all the products at 68F. Ensure that cooling foods are done in blast chiller, in shallow pans uncovered and stirred. Talked to staff about cooling logs and techniques. Corrective Action: Corrected at time of inspection.
