Inspector's notes
Observed no paper towels available at the handwashing sink nearest the three-compartment sink. The manager went to grab paper towels and supplied them by the sink, at time of inspection. The sink is small, and the paper towels often fall when placed at the edge of the basin, causing them to be stored far away from the sink. Discussed the possibility of attaching a paper towel dispenser to the wall near the handwashing sink so there would be a designated spot for paper towels. Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. Corrective Action: Corrected at time of inspection.

Observed meat juices pooling in a black tray with other closed packages of meat sitting on top. Alerted the manager, who brought the black tray back to the three-compartment sink to be washed, rinsed, and sanitized. All affected packaging was also wiped clean and sanitized. Discussed the importance of immediately cleaning spills as they happen. Discussed cleaning procedures to mitigate foodborne outbreak risks. Corrective Action: Corrected at time of inspection.

Observed a lack of knowledge about recommended sanitizer concentrations and how to test the chlorine concentration. EHS re-trained staff while onsite. All removable plastic catch basins on the meat display MUST be washed, rinsed, and sanitized at the appropriate concentration every 7 days or as spills occur.
