At in use wiping cloth bucket, chlorine sanitizer with a concentration >200ppm. Employee re-made chlorine sanitizer bucket to the proper concentration. Recommended purchasing new chlorine test strips to ensure proper concentration for wiping cloth buckets and 3-compartment sink. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer is to be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.

Instructed employee to move sheet pans of cooked onions, cooked mushrooms, cooked potatoes to reach in coolers to continue the cooling process. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
