Observed TCS/RTE food items (three blocks of butter) on a sheet pan located in food prep area at a temperature of 70 F. Per PIC, butter had been taken out of temperature control three hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. TCS/RTE food items were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed preventing contamination by consumers. Reviewed if salmon is offered undercooked, a consumer advisory is required as well as parasite destruction letter from the supplier. Provided handout guidance via email for parasite destruction and consumer advisory. Recommended obtaining min/max thermometer or high temp dishwashing strips to ensure the dishwasher is getting to the required 160*F.

Observed establishment to offer steak frittes, sirloin, and AC burger. Upon questioning, person in charge (PIC) stated these items are offered undercooked. Menu did not have consumer advisory disclosure nor asterisk for menu item. PIC stated a new menu is in process with consumer advisory but unsure when new menus would be available. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Must provide approved consumer advisory at all points of sale prior to re-inspection. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 7/8/25.

Establishment observed using 4-hour time as a control for all buffet items. Observed individual packets of dairy butter and cream cheese, measured 45-58'F. Items were put on time as control at 6am, longer than 4 hours prior. PIC voluntarily discarded items in question at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Food items on 4-hour time as a control shall be discarded after 4 hours. Corrective Action: Corrected at time of inspection.
