Inspector's notes

Observed large metal container of fried chicken sitting on the table in the main kitchen. Chicken pieces had an internal temperatures of 70-75 degrees Fahrenheit. Per person in charge the chicken was cooked three hours prior to reinspection and he planned on putting in the refrigerator later. Spoke with manager via telephone and reviewed chicken cold holding requirements. Chicken voluntarily discarded at time of inspection. Correct at time of inspection.

Establishment had cooked rice sitting on the table next to the main cook line. Spoke with manager via telephone and he stated the rice should be on time as a control and will discard after four hours. No log or labels indicating the time the rice was placed out on time as a control was available. Person in charge said the rice was cooked at 10:30am. Rice was labeled with set out and discard time at time of inspection. Corrected at time of inspection.
