Observed 0 ppm Quat sanitizer in the 3-compartment sink sanitizer actively being used at time of inspection. Quat sanitizer should be between 200-400ppm to ensure the dishes are properly sanitized. The PIC made the sanitizer solution by hand and will contact their chemical company to service the chemical dispenser. Corrective Action: Corrected at time of inspection.
