#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Prep cooler with sheet trays on top had the following TCS foods measuring an internal temperature of 56-60'F: cooked chicken wings, tzatziki sauce, pickles, and Chicago style relish. Per person in charge items had been placed into cooler < 4 hours prior. Instructed person in charge to move items to walk-in cooler to cool down. Ambient air temperature of cooler measured 57.9'F with min/max thermometer. Other working refrigeration available nearby. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Steam wells had a container of chili measuring an internal temperature of 107'F and container of marinara measuring an internal temperature of 122'F. Per person in charge both items were placed into water bath around opening (approximately 2 hours prior) at full temperature and then temperature is turned down for hot holding. Person in charge turned up temperature on steam wells to begin reheating both items. TCS shall have an internal temperature of 135'F or higher when hot holding. Corrective Action: Corrected at time of inspection.
