#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed pre-packaged sushi stored in insulated transport container with an internal temperature of 48-52*F. According to PIC, sushi had been packaged 20-30 minutes prior to inspection and verified cold holding temperature to be 41*f 10 minutes prior to inspection. Discussed importance of keeping transport container of sushi, cold or in walk-in cooler until ready for delivery. Two ice packs were observed inside insulated container and was only able to keep sushi containers (stored on the bottom) below 41*F. All other sushi was ranging between 48-52*F. All sushi was stored back in walk-in freezer to rapidly chill prior to delivering.
