Observed TCS (time and temperature controlled for safety) foods such as italian sausage, cooked pasta with bacon, and items containing cut tomatoes in the reach-in cooler with internal temperatures ranging from 47-50*F when measured with a probe thermometer. According to chefs, items had been in reach-in since the night before. All TCS foods must maintain internal temperatures of 41*F and below. Items were discarded at time of inspection (see embargo).
