PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.......Pepperoni, sausage, ham, shredded cheese in the pizza make cold table at 48*F to 49*F internally. Manager stated temperature check had been good less than two hours before and moved all TCS food in the unit to the walk-in to re-cool. Manager put new TCS food into the unit under time as control with proper discard and stated the time control will continue until the unit is repaired and holding proper cold. Please ensure cold-held TCS food is maintained 41*F or below.
