Observed half-pig hanging in the walk-in cooler with legs touching the ground. PIC stated that the pigs stretch out over time and that they were originally stored 6 inches above the floor. PIC was advised to re-adjust the hanging meat more frequently in order to prevent contamination from the premises. Pig was raised at the time of inspection. Corrective Action: Correct prior to next routine inspection.

All facility made, ready-to-eat, Temperature control for safety foods must be date-marked if not used or discarded within 24 hours of preparation and must be discarded after 7 days in cold-holding. Facility-made spread was date marked per the date the PIC stated. Corrective Action: Correct prior to next routine inspection.

Observed Raw and frozen meat products in reduced oxygen packaging (ROP) that was packaged in the facility with a previously approved HACCP plan. ROP product labels did not display safe handling instructions, Frozen products did not state "keep frozen until use", and temperature logs could not be provided at the time of inspection. Discussion was held with PIC about the HACCP conditions and documentation requirements.
