Observed raw shrimp ceviche stored above RTE pico de gallo, containers of packaged salsa, and a bucket of yellow peppers. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. . Inspector's notes

Observed RTE chicken wings at holding between 107-124*F, taquitos and burritos at 114*F, jalapeno poppers at 117*F and pork ribs and cooked yellow peppers at 120*F when measured with a probe thermometer. PIC provided cook/reheat logs from all foods that had been reheated less than 2 hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Observed the steamer unit turned to the highest setting. Observed other TCS foods in the right of the case with higher moisture content holding at 135*F or higher. Advised PIC to ensure foods are moved into the hot case quickly after preparing to ensure heat is not lost to the environment. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-5-402.13, P: Conveying Sewage ------ Observed an active sewage backflow at the "Isle 1" floor sink underneath shelving. Observed approximately 1 inch of standing water in the meat market area extending into the meat market office and back hallway. PIC stated the water backed up from the floor sinks under the 3 comp sink approximately 15-20 minutes prior to the start of the inspection. PIC was in the process of submitting a work order for repair at the time of inspection. Observed standing sewage at the floor sinks in the bakery/deli near the hall hand sink, ovens, and steam well. Observed a small backflow from the floor drain near the bakery hand sink after an employee washed their hands. Discussed standing sewage/grey water is an imminent health hazard and all food operations should cease. Discussed that the establishment does not meet the minimum requirements for operation since the establishment is not able to use the 3 comp sink for warewashing or handwashing in multiple areas. Discussed that the establishment cannot remain open with standing wastewater in the floor sinks/drains/floors. Please contact us for re-inspection once the drains/lines are clear, and there is no longer waste water accumulating in the drain. No open food is permitted to be served or prepared until the suspension is lifted. A re-inspection will be conducted upon repairing the drain line so that all plumbing fixtures can function normally. The cook stated the fan intermittently quits then resumes. PIC had not been notified the fan was in disrepair. Observed an accumulation of grease and smoke on the ceiling tiles and walls in the surrounding areas. PIC placed a work order on the fan at the time of inspection. Discussed a working fan is needed to prevent grease or condensation from collecting on walls and ceilings.
