Observed deli style turkey/ham meat in a cold-holding unit with internal temperatures of 47*F to 49*F with probe thermometer. Person in charge (PIC) voluntarily discarded at time of inspection and opened a work order to check the unit. See embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed moving the containers to an area where it cannot be contaminated with raw animal proteins. Observed raw beef honeycomb and raw beef feet stored above RTE nixtamal and marinated raw beef for tacos stored above RTE lard. Observed all packages tightly wrapped in plastic wrap with no visible dripping observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PRIORITY VIOLATION-5-402.13, P: Conveying Sewage ------ Observed an active sewage backflow at the "Isle 1" floor sink underneath shelving. Observed approximately 1 inch of standing water in the meat market area extending into the meat market office and back hallway. PIC stated the water backed up from the floor sinks under the 3 comp sink approximately 15-20 minutes prior to the start of the inspection. PIC was in the process of submitting a work order for repair at the time of inspection. Observed standing sewage at the floor sinks in the bakery/deli near the hall hand sink, ovens, and steam well. Observed a small backflow from the floor drain near the bakery hand sink after an employee washed their hands. Discussed standing sewage/grey water is an imminent health hazard and all food operations should cease. Discussed that the establishment does not meet the minimum requirements for operation since the establishment is not able to use the 3 comp sink for warewashing or handwashing in multiple areas. Discussed that the establishment cannot remain open with standing wastewater in the floor sinks/drains/floors. Please contact us for re-inspection once the drains/lines are clear, and there is no longer waste water accumulating in the drain. No open food is permitted to be served or prepared until the suspension is lifted. A re-inspection will be conducted upon repairing the drain line so that all plumbing fixtures can function normally.
