Inspector's notes

In one end of the refrigerated, pre-packaged cheese island near the deli, observed TCS cheese like goat cheese, cheddar cheese, belletoile triple cream cheese, and Brie cheese holding 52-60F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation. All TCS foods improperly cold held were most likely out of temp more than 4 hours and were discarded by PIC at time of inspection. Manager to schedule repair of the refrigerated case. Corrective Action: Corrected at time of inspection.
