observed pans of on site prepared menudo, and rojo menudo and on siteprepared chicharon salda, at 98-101.5 deg f. observed tcs in deep plastic trays. spoke to pic regarding an effective use of smaller shallow metal pans and ice bath method for a desired 2 tier cooling. manager relocated all 5 food tubs to shallow metal pans and ice bath . please monitor onsite food cooling. manager and department spanish liaison provided some cooling strategies at the time of inspection.
