Discussed removing the loose caulk and re-caulking the junctures in order to create a smooth and easily cleanable surface that prevents pathogen growth and pest harborage. Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent pathogen growth and the harborage of insects and rodents. Corrective Action: Correct prior to next routine inspection. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Addl Notes: The make line/reach in cooler unit has a door on the right side that is broken and falling off of the unit. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Inspector's notes

Observed various TCS toppings such as mozzarella cheese, pepperoni, precooked sausage, and diced ham cold holding in the refrigerated bins in the pizza make-line table, with internal temperatures of 55-56F, probe thermometer, verified by person in charge (PIC). According to PIC, the toppings are reused and placed back into the top of the make-line to make additional pizzas. PIC will contact maintenance to service the unit and will not use TCS toppings that are not maintained at 41F or less. PIC voluntarily discarded the toppings, see embargo form. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
